Funk: Luck of the Legume

What do you think about when you hear St. Patrick’s Day? Ah yes, the luck of the Irish, and the fun that surrounds this holiday.
You’ll have fun including soy in your St. Patrick’s Day recipes, and making them healthier. Edamame is just one of the great soy choices. The green color fits perfect with the holiday, and I hear it goes well with beer. There are many ways to use it for a gathering. A bowl of edamame in the pod is a great start, also, you might enjoy some edamame hummus with green pepper strips to dip.
If there is a Trader Joe’s retail store in your area, they have a tasty prepared edamame hummus as well as chocolate-covered edamame and edamame crackers. You should definitely check these products out.
The edamame and corn salad recipe I’ve included is healthy and fresh and, if you add black soybeans, it is perfect for eating with tortilla chips. I’ve also included an edamame dip recipe that will look and taste great at your St. Patrick’s Day celebration.
Have fun, and enjoy the fact that you’re adding some healthy protein to your food. On this holiday, we all have a little Irish in us!
